Our laboratory focuses on both fundamental and more immediately applied research in functional delivery systems in the areas of food safety, shelf-life extension of food products, and nutrient bioavailability. We are currently working on the design of colloidal dispersions (nanoemulsions, nanoparticles) for controlled release of active compounds (i.e., antimicrobials, antioxidants, and other nutraceuticals) in food systems. In terms of fundamental studies, we seek to gain an understanding of the impact of physicochemical characteristics of the surroundings on manufacturing and release mechanisms of colloidal dispersions at a more fundamental level so that we can rationally guide delivery of a particular active compound to the site of action. Our application focused research involves applying the delivery systems into food materials and food contact materials (i.e., packaging, utensils) and verifying their efficiency and stability.
